Pierogi Pancakes

All the pierogi pleasure, without the gluten or carbs, high in protein!

Makes 8 small pierogi pancakes

What you will need:

1/4 cup protein powered pancake mix
3 Tbsp water or 1/4 cup milk or milk alternative 
1/2 cup shredded cheese 
1 small potatoe mashed
2 pieces of bacon cooked and cut into small bite sized pieces
1/4 cup chopped red onion
2 TBSP chopped green onion 
salt and pepper to your taste

How to do it: 

Step 1: Put your pan on the stove on setting 4 (or 270 F on a grill) and add olive oil or butter.

Step 2: Using a fork, whisk 1/4 cup of the mix, with 3 Tbsp water or 1/4 cup milk or milk alternative.

Step 3: Stir in all remaining ingredients.

Step 5: Use a TBSP to spoon batter onto the pan making small pancakes.

Step 6: Cook until light brown and flip to cook the other side (add oil before flipping).

Step 7: Garnish with sauerkraut and sour cream!
