Sweet Crepes
Nutritionally dense, high protein crepes that taste like they couldn't possibly be healthy! Fill with fruit and top with whipped cream (creme fraiche or coconut cream work well too)!
Makes 5 medium crepes
What you will need:
1/4 cup protein powered pancake mix
1/2 cup milk (or milk alternative)
2 tsp powered erythritol
1 egg
butter
chopped fruit of your choice
whipping cream
Optional:
cinnamon
fresh mint
How to do it:
Step 1: Put your pan on the stove on setting 4 and add a small amount of butter.
Step 2: Using a fork, whisk 1/4 cup of the mix, with 1/2 cup milk or milk alternative.
Step 3: Whisk a whole egg into the batter.
Step 4: Mix in the erythritol.
Step 5: Use a quarter cup measuring cup to spread into a circle onto a slightly greased non-stick pan.
Step 6: Cook until light brown.
Step 7: Run wide spatula around the edges to loosen and flip.
Step 8: Place fruit inside the crepe and roll.
Step 9: Garnish with more fruit and whipped cream.
