Protein Powered Latkes
What you will need:
1/4 cup Protein Powered Baking Mix (gluten free & low carb)
3 Tbsp water
1/2 -1 medium zucchini (shredded or spiralized)
Variations below!
How to do it:
Step 1: Grate or spiralize the zucchini.
Step 2: Squeeze out the water (use a clean towel or cheesecloth or paper towel)
Step 3: Stir water into the mix and then add the dried zucchini.
Step 4: Turn your pan on med and add butter or coconut oil.
Step 5: Saute until you see the zucchini start browning and then flip (about 2 min each side).
Serve with sour cream, salt and fresh grated pepper on top!
Variations:
1. soft vegetables that cook really fast on low temp like greens, green onion, scallions red onion or bell peppers.
2. cooked vegetables (great way to use up leftovers)
3. replace the water in the recipe with an egg to get more protein
4. add cheese for more flavour and protein
