Protein Powered Chocolate Cake

(high protein, gluten free, low carb)!

What you will need:
3 eggs
3/4 cup of granulated erythritol
1 cup coconut milk
1 tsp vanilla extract
1/2 cup melted coconut oil
1 tsp baking powder
1/4 cup coconut flour
2/3 cups cocoa powder
1 cup Protein Powered baking mix

How to do it:
Step 1: Preheat the oven to 350 F.
Step 2: Melt coconut oil on low.
Step 3: Beat the eggs with the granulated erythritol in a large bowl placed in the sink.
Step 4: Beat in the rest of the ingredients in the exact order listed.
Step 5: Put parchment paper in whatever kind of baking pan you decide to use ( I used 9 x 4 inch).
Step 6: Pour in the batter and bake for 30-35 minutes (test with a toothpick to make sure it’s done).

Double the recipe and cook in two round pans to make a layer cake!
