Protein Powered Breakfast Cookies

Makes 38 med sized cookies @ 4.5 grams of protein each! High protein, gluten free, low carb and also no oats!

I used unshelled hemp seeds for the crunch, which also adds even more protein...plus brewers yeast for extra nutrition so that these babies can double as a nutrient-dense lactation cookie for postpartum mamas oxoxo

What you will need:

Dry ingredients:
1 cup unshelled hemp seeds
1 cup almonds finely chopped (or other nuts or seeds)
5 Tbsp brewer's yeast
1/4 cup ground flax seed
1/4 cup coconut flour
1 cup Protein Powered baking mix
1 tsp ginger powder (or other warming sweet spice like cinnamon)
1 tsp baking powder
1/4 tsp unrefined salt
3/4 cup of granulated sweetener of choice (I used erythritol)
1/2 cup desiccated dried coconut
3/4 cup chocolate chips (or dried fruit)

Wet ingredients:
1/2 cup oil (olive oil or melted coconut oil)
4 eggs
1 Tbsp orange (or vanilla extract)

How to do it:
Step 1: Pre-heat oven to 350F
Step 2: Mix dry ingredients.
Step 3: Whisk together wet ingredients.
Step 4: Mix dry and wet ingredients.
Step 5: Put parchment paper on a cookie tray.
Step 6: Use your hands to form the cookies (you might have to wash your hands once or twice)
Step 7: Press down with a fork.
Step 8: Bake for 17-20 min.
