Protein Powered Quesadillas

Yummy! Low carb yet totally traditionally tasty!

What you will need:
1/4 cup milk/milk alternative
1 egg
1/2 cup shredded cheese
1 mashed avocado
1 refried beans (optional)

How to do it:
Step 1: Stir the mix into the milk and then whisk in an egg.
Step 2: Spread oil on a crepe pan (or other non-stick pan, and place on an element set to medium.
Step 3: Pour the batter, lift and move the pan around until it is completely covered.
Step 4: Cook it just until it is just firm enough to flip.
Step 5: Spread the toppings onto top in the following order, mashed beans, avocado and shredded cheese. Cover with a lid till the cheese melts.
Step 6: Flip over one side so that it sticks to the other side.
Step 7: Let sit for 3 minutes and then slice in half.

Serve with sour cream and salsa!
